Steve Blake, ScD is a nutritional biochemist who attended UC Berkeley. He has a doctorate in holistic health and a doctorate in naturopathic medicine, and he lectures widely about the role of nutrition in health. In this video, he describes recent studies linking saturated fat intake with diabetes risk. Although reducing refined carbohydrates can lower blood sugar, it cannot reverse type II diabetes. Dr. Blake cites studies showing actual disease reversal by keeping dietary saturated fat intake very low: to 6% of calories, or 12 grams a day. He discusses which foods to eat to reach this goal, and how to plan your diet.
